The Western Sydney Food Bloggers were pretty excited about a week ago. We were invited to a masterclass and lunch at Stockland Wetherill Park. Our teacher was celebrity chef, Miguel Maestre! It was a special occasion to kick start a new initiative by Stockland's called, The A to Z of Mmmm!

The A-Z of Mmmm is a growing collection of online recipes, videos and article’s which will to ignite our excitement for cooking. The website is live from today. Miguel is the ambassador of the A-Z of Mmmm. He has created a load of vibrant recipes to inspire us all to cook more fresh and creative food at home!

Over the next 12 months Miguel will tour Stockland’s centres to share these recipes and his enthusiasm for cooking with fresh local ingredients. He gets the ball rolling on the 4th of March at Stockland in Merrylands.

We shared beautiful plates of Miguel's delicious creations at lunch. The long table was filled with platters of kingfish ceviche, lamb and beetroot kofta’s, tomato salad and chorizo stuffed chicken. I have to admit, Miguel is bit of a dish himself! He is as charismatic and witty in person, as you see on the TV!

Last night I whipped up his tasty chorizo stuffed chicken for dinner. It looks impressive but was really easy to make! I put my own spin on  by using chicken breast instead of thigh meat.  Every one loved it! It was easier to make than it looks. I served it on a bed of White bean salad with some healthy tossed salad on the side, delicious!


Chorizo Stuffed chicken With White Bean Salad

Serves 4 as a side dish (I doubled the recipe for presentation)


White Bean Salad

A-Z of mmmmm



1 can butter beans, drained and rinsed

1 red chilli, seeds removed, finely diced

1 French shallot, finely diced

3 tablespoons finely chopped chives (to garnish)

3 tablespoons roughly chopped coriander

3 tablespoons roughly chopped mint leaves

2 tablespoons roughly chopped olives

3 tbsp mayonnaise



Toss all white bean salad ingredients and stir to combine. Season to taste with salt and pepper. Set aside.

Garnish with chives


Chorizo Stuffed Chicken

Makes two long rolls of stuffed chicken to serve 4-6


800gm flattened chicken thigh (I used breast schnitzel pieces)

2 chorizo sausages

8 slices of prosciutto

Puree chorizo in food processor 

Lay down prosciutto, slightly overlapping on plastic food wrap.

Lay chicken on prosciutto to cover width and place a thick line of chorizo down centre.

Roll tightly to form a cylinder (I used a sushi mat for this step), wrap in glad wrap and refrigerate for approx half and hour.


Preheat oven to 180C

Line a baking tray with non stick paper

Remove chicken from cling wrap and sear the outside in a hot oiled pan

Place chicken oven tray and bake in the oven for appox 30 mins

Remove from oven, let chicken rest for a few moment then slice into 1.5 cm rounds.

Serve with white bean salad.
