As a busy mum myself, I have Amanda’s blog bookmarked on my laptop for those times when I need ideas for fast family dinners and healthy lunch boxes. I was lucky enough to receive a preview copy and found plenty of cooking inspiration from the 150 savoury dinners, breakfasts, quick snacks and sweet temptations featured in the book. Amanda’s cooking style is fast, fresh and filling with recipes that have been written in an easy to follow format. I found some of the well loved recipes from Amanda’s blog, alongside many new ones which will remain exclusive to the book. As a bonus, Amanda has included some great resources to help get your pantry organised as well as offering suggestions for useful kitchen equipment. I loved the valuable tips on saving money at the supermarket and how to encourage fussy eaters to try new foods.

The dinner section includes lots of versatile one pot wonders and tray bake meals which is great because this style of cooking keeps the washing up to a minimum. I have already discovered a few new recipes which are bound to become family favourites, especially the Layered Mexican Chicken Bake which is currently Mr 10’s most requested dinner.  He hasn’t even noticed that a few extra veggies have been flying under his radar.

At this time of the year, my crockpot gets a workout. Last weekend I filled it with Amanda’s Honey and Mustard Chicken, it was easy to pull together without the need for a store bought jar. Better still it cooked itself in the crockpot while I raced out and did my shopping. It was a delicious creamy chicken dinner the whole family enjoyed.

 

Crockpot Honey and Mustard Chicken

Recipe by Amanda Voisey of Cooking For Busy Mums

Serves 4 - 6

 

INGREDIENTS

6 Chicken Thighs or 3-4 Chicken Breasts (I used diced chicken breast)

1/3 Cup Honey

1/3 Cup Seeded Mustard

1 Tsp Minced Garlic 3 Tbs Hot Water

1 Tsp Vegeta Chicken Stock powder

2 Spring Onion stalks, sliced finely

2 Carrots, sliced

1 Cup Corn kernels, fresh, can or frozen(thawed)

1/3 Cup Thickened Cream

METHOD

1. If your slow cooker sautés, place the spring onions, garlic and chicken into it and brown the chicken on all sides. If your slow cooker doesn’t sauté do this in a fry pan then add to the slow cooker.

2. In a bowl, mix together the honey, mustard, hot water and chicken stock powder. Pour over the browned chicken. Add the sliced carrots and mix everything together.

3. Set to cook on low for 6-8 hours (I cooked mine on high for around four hours, the chicken was cooked through and tender).

4. Add the corn kernels and cream to the slow cooker and stir to combine.

Serve with steamed rice, pasta or mashed potato.
