Life has been really busy lately. It’s always busy, but I mean like, next level busy. As much as I usually quite enjoy strolling leisurely around the markets with a coffee in hand, it’s times like these that I am extremely grateful for online grocery shopping. To help regain some of the time that I would normally spend visiting the shops and planning out meals, I decided to give the fresh groceries from Aussie Farmers a go and in particular, their Simple and Fresh Dinnerbox.

Aussie Farmers' Simple and Fresh Dinnerbox contains recipes and ingredients to create easy, wholesome and delicious meals at home. You can order the boxes as a one-off or subscribe to get them delivered on a regular basis. They come in a few different sizes to suit different types of households and eating habits. I opted for a one-off order of the 3 meals for 2 people.

The three meals I was cooking up thanks to the dinnerbox were Mexican Hash Brown, Chicken and Mushroom Rigatoni, and Grilled Rump Steak with Potato, Zucchini and Feta Mash.

First up was the Mexican Hash Brown. This dish had loads of veggies in it as well as one of my favourites, chorizo. It involved a bit of chopping and mashing of the potato, but it was pretty simple to throw together. I ended up making this for a weekend brunch and decided to serve it with some fried eggs. The Mexican Hash Brown was something I had never heard of or made before, so I was stoked to try something different and will be keeping this recipe card handy so I can make it again in future.

Next was a hearty dinner of Chicken and Mushroom Rigatoni. This creamy pasta dish was again really simple to make and very tasty. This recipe called for a self-supplied pantry ingredient of wholegrain mustard. I didn’t have any on hand, so just used Dijon and it turned out just fine! There were also side salad ingredients included in the Dinnerbox which I served with the pasta with to make it a more balanced meal. There was heaps of pasta leftover so we reheated it the next night for dinner again.

Finally, I cooked the Grilled Rump Steak with Potato, Zucchini and Feta Mash. Steak and mash isn’t exactly revolutionary, but I have never made mash with zucchini and feta in it, so it was nice to try something new. I still had quite a few ingredients that I didn’t use up in the first two recipes, so I decided to incorporate them into this meal. With the leftover cream and mushrooms from the rigatoni, I made a quick mushroom sauce. I also steamed leftover corn from the hash brown recipe to go alongside the side salad.

I’m not normally one to follow a recipe to a tee, so it was great that all three recipes in the Dinnerbox had room to add my own touch when I was feeling a bit creative. It was nice to not have to visit the shops or have to use up mental energy on deciding what to cook. The meals were all fresh, filling and balanced and something a bit different to the recipes normally on rotation in my kitchen.
