This is one of the slices I remember from my childhood. Its easy to make as most of the ingredients are pantry staples. I made a double batch this weekend so I could stash some in the freezer. I plan to take a container full camping over the easter weekend. This is a great way to use up those Weet-Bix crumbs that accumulate at the bottom of the packet.

 Biscuit Base

6 Weet-Bix crushed

3 cups self raising flour

2 cups desiccated coconut

250gm butter

1 1/2 cups brown sugar

Chocolate Icing

2 cups icing sugar

2 tablespoons cocoa powder

2 teaspoons butter, softened

3 tablespoons milk (or water)

2 tablespoons desiccated coconut, for sprinkling on top of slice

  1. Preheat oven to 180 degrees Celsius 160 degrees Celsius fan-forced
  2. Lightly grease a shallow sided long roasting pan, line with baking paper. (my pan was 39cm x 26cm)
  3. Melt butter in microwave in 20 second bursts
  4.  Finely crush Weet-Bix by breaking them up with your fingers or using a food processor
  5. Stir coconut, brown sugar, Weet-Bix and flour together in a large bowl until well combined
  6. Add butter and stir to combine
  7. Firmly press mixture into prepared pan using the bottom of a heavy glass to help press evenly
  8. Bake in oven 20 - 25 mins.

 Icing the Slice

Sift icing sugar and cocoa together into a medium bowl, add butter and milk  (or water) and stir until smooth. The icing should be thick but it will spread easily when placed onto the hot slice.

Remove slice from the oven and let sit a moment or two before icing.

Spread icing gently over slice being carefull not to remove the top layer of crumbs. Sprinkle with coconut. Cut into serves when cool.

Enjoy with a cup or tea. Slice can be frozen. Halve the recipe for a smaller slice, bake in a standard  size slice pan, cooking time may vary.
